  • 1 lb fresh shrimp, peeled and deveined
  • 8 corn tortillas
  • 1 cup shredded Monterey Jack cheese
  • ½ cup sour cream
  • 4 oz canned green chiles (mild)
  • 2 cups enchilada sauce (store-bought or homemade)
  • 1 tsp garlic powder
  • 2 tbsp olive oil

Instructions

  1. Preheat the oven to 375°F (190°C) and spray a baking dish with nonstick spray.
  2. In a skillet over medium heat, add olive oil. Cook shrimp for about 3 minutes until pink and opaque. Stir in green chiles and half of the cheese.
  3. Spoon shrimp filling onto each tortilla and roll tightly; place seam-side down in the prepared baking dish.
  4. Combine enchilada sauce with garlic powder and pour over rolled tortillas. Top with remaining cheese.
  5. Cover with foil and bake for 20 minutes; remove foil for the last 5 minutes to brown the cheese.
  6. Allow cooling slightly before serving with extra sauce or sour cream.
