- 4 boneless, skinless chicken breasts (about 1.5 lbs)
- 4 medium Yukon Gold potatoes, diced
- 4 cloves fresh garlic, minced
- Juice of 2 fresh lemons
- 3 tbsp extra virgin olive oil
- 1 tsp salt
- 1 tsp pepper
