Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a bowl, mix together flour, baking soda, cinnamon, and salt.
  3. In another bowl, combine pumpkin puree, granulated sugar, brown sugar, eggs, and melted butter until smooth.
  4. Stir the wet mixture into the dry ingredients until just combined; avoid overmixing.
  5. For the streusel topping, mix flour, brown sugar, cinnamon, and cold butter until crumbly.
  6. Pour half of the batter into the prepared pan, sprinkle half of the streusel on top, add remaining batter, and finish with the rest of the streusel.
