  • 2 cups mixed fresh grapes (1 cup red, 1 cup green)
  • 1 cup dry Prosecco
  • 2 tbsp extra virgin olive oil
  • 2 tsp fresh thyme (or 1 tsp dried thyme)
  • 3 cloves garlic, minced
  • 1 tsp salt
  • ½ tsp pepper
  • Zest of 1 lemon

Instructions

  1. Preheat your oven to 400°F (200°C) and lightly spray a baking dish with nonstick spray.
  2. In a bowl, coat chicken breasts in olive oil, then season with salt, pepper, and minced garlic.
  3. Place seasoned chicken in the baking dish, surrounding it with grapes. Sprinkle thyme over the top.
  4. Pour Prosecco over the chicken and grapes, then add lemon zest.
  5. Bake for 30-35 minutes or until chicken reaches an internal temperature of 165°F (75°C) and is golden brown.
