  • 2 tbsp olive oil

Instructions

  1. Preheat oven to 450°F (230°C).
  2. Score the skin of the pork belly in a crosshatch pattern.
  3. In a bowl, mix garlic, rosemary, fennel seeds, black pepper, salt, and lemon zest to create a filling.
  4. Rub the filling thoroughly over the meat side of the pork belly.
  5. Roll tightly from one end and secure with kitchen twine at intervals.
  6. Heat olive oil in a skillet over medium-high heat; sear the rolled porchetta seam-side down until golden brown on all sides.
  7. Transfer to a roasting rack and roast for about 1 hour or until the internal temperature reaches 145°F (63°C) and skin is crispy.
  8. Let rest for 10 minutes before slicing.
