  • 1/2 cup butter (softened)
  • 4 cups powdered sugar

Instructions

  1. Preheat oven to 350°F (175°C). Grease two 9-inch round cake pans.
  2. In a large bowl, whisk together flour, granulated sugar, brown sugar, baking soda, baking powder, cinnamon, and nutmeg.
  3. In another bowl, beat eggs with vegetable oil and vanilla extract. Gradually add to dry ingredients while stirring gently.
  4. Fold in grated carrots and nuts until evenly mixed.
  5. Divide batter between prepared pans and bake for 25-30 minutes until a toothpick comes out clean.
  6. Cool cakes in pans for 10 minutes before transferring to wire racks. Once cooled completely, frost with cream cheese frosting.
