  • 2 cups carrots, sliced into sticks
  • 2 cups broccoli florets
  • 1 cup firm tofu or 1 lb chicken thighs, cubed
  • 3 tbsp white miso paste
  • 2 tbsp raw honey
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp sesame oil

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Wash and slice the carrots into sticks; chop the broccoli into bite-sized florets.
  3. If using tofu, press and cube it; season chicken thighs with salt and pepper if using chicken.
  4. In a bowl, whisk together miso paste, honey, soy sauce, and sesame oil until smooth.
  5. Toss carrots and broccoli in half of the glaze on the baking sheet; then add tofu or chicken pieces. Drizzle the remaining glaze over everything.
  6. Roast for 25-30 minutes until vegetables are tender and caramelized.
