  • 1 ½ cups all-purpose flour
  • ½ cup unsalted butter, chilled and cubed
  • ½ cup pumpkin puree (canned or homemade)
  • ¼ cup granulated sugar
  • 1 tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • ½ tsp salt
  • 34 tbsp ice water
  • 1 egg + 1 tbsp water (for egg wash)

Instructions

  1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a bowl, mix flour and salt. Cut in butter until crumbly. Gradually add ice water to form a dough. Chill for 30 minutes.
  3. Combine pumpkin puree, sugar, cinnamon, nutmeg, and salt in another bowl.
  4. Roll out dough to about 1/8 inch thick and cut into circles (4 inches in diameter).
  5. Place a tablespoon of filling on each circle, fold over, and crimp edges with a fork.
  6. Brush with egg wash and bake for 25–30 minutes until golden brown.
