  • 16 Oreo cookies (crushed, divided)
  • 2 cups cream cheese (softened)

Instructions

  1. Preheat the oven to 325°F (160°C) and line a muffin tin with cupcake liners.
  2. Crush 8 Oreo cookies and mix with 3 tbsp melted butter. Press into the bottom of each muffin liner.
  3. In a bowl, beat softened cream cheese until smooth. Add sugar, sour cream, and vanilla; mix until creamy. Gradually add eggs, mixing just until combined.
  4. Pour the cheesecake mixture over the crusts and sprinkle with remaining crushed Oreos.
  5. Bake for 20-25 minutes until set but slightly jiggly in the center. Cool completely and chill in the fridge for at least two hours.
