  • 4 salmon fillets (6 oz each)
  • 3 tbsp extra virgin olive oil
  • 3 cloves garlic, minced
  • 2 tbsp fresh lemon juice
  • 1 tsp dried oregano
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 cup cherry tomatoes, halved
  • ½ cup Kalamata olives, pitted

Instructions

  1. Preheat your oven to 400°F (200°C) and lightly spray a baking dish with nonstick cooking spray.
  2. In a bowl, mix olive oil, minced garlic, lemon juice, oregano, salt, and pepper until well combined.
  3. Place salmon fillets in the baking dish and pour half of the marinade over them. Let it marinate while you prep the vegetables.
  4. Scatter cherry tomatoes and olives around the salmon and drizzle remaining marinade over everything.
