  • 1 lb lean ground chicken
  • 1/4 cup fresh parsley, chopped
  • 3 garlic cloves, minced
  • 1/4 cup red onion, finely chopped
  • 1/2 cup panko breadcrumbs
  • Salt and pepper to taste
  • 1 can (15 oz) crushed tomatoes
  • 1 tsp dried oregano
  • 2 tbsp extra virgin olive oil

Instructions

  1. Preheat your oven to 400Β°F (200Β°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine ground chicken, parsley, garlic, red onion, panko breadcrumbs, salt, and pepper. Mix well using your hands.
  3. Form the mixture into golf ball-sized meatballs and place them on the baking sheet.
  4. Bake for 20-25 minutes until golden brown and cooked through.
  5. In a saucepan over medium heat, heat olive oil and add crushed tomatoes and oregano. Simmer for about 10 minutes until thickened.
  6. Serve the meatballs drizzled with sauce and garnish with additional parsley if desired.
