  • 2 tbsp cornstarch mixed with 2 tbsp water (for gravy)

Instructions

  1. Preheat the oven to 300°F (150°C). Season the chuck roast generously with salt and pepper.
  2. Heat oil in a large Dutch oven over medium-high heat. Sear the roast on all sides until golden brown, about four minutes per side.
  3. Remove the roast from the pot; add chopped onions and carrots, sautéing until softened (about five minutes). Stir in minced garlic for the last minute.
  4. Return the roast to the pot, pour in beef broth, and add thyme and rosemary. Bring to a simmer.
  5. Cover and transfer to the oven; slow-cook for about three hours until fork-tender.
