  • 1 cup canned black beans (rinsed)

  • 1 cup corn (fresh or frozen)
  • ¼ cup fresh cilantro (chopped)

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Wash and halve the baby potatoes. Toss them in a large bowl with olive oil, chili powder, salt, and pepper until evenly coated.
