  • 1 lb lean ground beef (80/20)
  • 8 corn or flour tortillas
  • 2 cups enchilada sauce (store-bought or homemade)
  • 2 cups shredded cheddar and Monterey Jack cheese blend
  • 1 medium onion, chopped
  • 2 tsp chili powder
  • 1 tsp cumin
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet over medium heat, cook the ground beef until browned; drain excess fat. Add the chopped onions and sauté until translucent.
  3. Stir in chili powder, cumin, garlic powder, salt, and pepper; simmer for about 5 minutes.
  4. Spread some enchilada sauce in the bottom of a baking dish. Fill each tortilla with the beef mixture and sprinkle with cheese before rolling tightly.
  5. Place rolled tortillas seam-side down in the dish, cover with more sauce, and top with remaining cheese.
