  • 2 medium sweet onions (Vidalia or Walla Walla), sliced
  • 4 tbsp unsalted butter
  • 1 cup heavy cream (or half-and-half)
  • 1 cup grated Gruyère cheese
  • 2 sprigs fresh thyme (or 1 tsp dried thyme)
  • Salt and pepper, to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a skillet over medium heat, melt butter. Add onions and sauté until translucent (about 10 minutes), stirring frequently.
  3. Stir in thyme, salt, and pepper; cook until onions are golden brown (approximately 20 minutes). Gradually add heavy cream while mixing.
  4. In a greased baking dish, layer half of the potato slices, then half the onion mixture, followed by half of the Gruyère cheese. Repeat layers.
  5. Cover with foil and bake for 40 minutes. Remove foil and bake until golden brown on top (15-20 minutes more).
