Ingredients

Scale
  • 34 lbs beef chuck roast
  • 4 cups low-sodium beef broth
  • 2 medium yellow onions, thinly sliced
  • 4 garlic cloves, minced
  • 1 French baguette, sliced
  • 1 tsp dried thyme

Instructions

  1. Season the beef chuck roast generously with black pepper and dried thyme. Heat oil in a skillet over medium-high heat and sear the roast on all sides until browned.
  2. In the same skillet, sauté onions and minced garlic until soft and caramelized (about 5-7 minutes).
  3. Transfer the roast to a slow cooker, add sautéed onions and garlic, and pour in the beef broth. Cover and cook on low for about 8 hours until fork-tender.
  4. Shred the beef using two forks and return it to the jus.
  5. Toast baguette slices under a broiler until golden brown.
  6. Assemble sandwiches by piling shredded beef onto one half of each toasted baguette. Dip the other half into the broth before serving.
