Ingredients

Scale
  • 1.5 lbs boneless, skinless chicken breasts (about 34 breasts)
  • 2 cups fettuccine or penne pasta
  • 2 tbsp olive oil
  • 4 garlic cloves, minced
  • 1 cup sour cream
  • 2 cups fresh spinach
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 tsp Italian seasoning
  • 1 cup low-sodium chicken broth
  • 1/2 cup freshly grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet over medium heat, add olive oil. Season chicken with salt and pepper. Cook for about 6-7 minutes on each side until golden brown and cooked through. Remove from skillet and let rest before slicing.
  3. In the same skillet, sauté minced garlic until fragrant. Pour in chicken broth, scraping up any browned bits from the pan. Stir in sour cream and Italian seasoning.
  4. Add spinach and sun-dried tomatoes to the sauce; cook until spinach wilts (about 2 minutes).
  5. Return sliced chicken to the skillet along with cooked pasta. Sprinkle with Parmesan cheese and toss to coat everything thoroughly.
  6. Serve hot with extra Parmesan if desired.
