  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 medium carrot, finely chopped
  • 2 tbsp olive oil
  • Fresh basil for garnish
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). In a bowl, combine ground beef, breadcrumbs, Parmesan cheese, salt, pepper, and the egg. Mix until just combined; form into golf ball-sized meatballs.
  2. Arrange meatballs on a parchment-lined baking sheet and bake for about 20 minutes until golden brown.
  3. In a skillet over medium heat, heat olive oil. Sauté onion, garlic, and carrot until softened (about 5 minutes). Add crushed tomatoes; season with salt and pepper. Let simmer.
  4. Cook spaghetti according to package instructions until al dente; reserve some pasta water before draining.
  5. Combine drained spaghetti with the sauce in the skillet. If too thick, add reserved pasta water gradually until creamy.
  6. Stir in heavy cream and gently toss in baked meatballs until coated. Serve hot with fresh basil and extra Parmesan.
