  • 34 ripe bananas (about 1.5 cups mashed)
  • 1 ½ cups all-purpose flour
  • ¾ cup granulated sugar
  • 1 tsp baking soda
  • ½ tsp salt
  • 2 tsp ground cinnamon
  • 2 large eggs
  • ⅓ cup unsalted butter (melted)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
  2. In a mixing bowl, mash the bananas until smooth with some chunks remaining.
  3. Mix in melted butter, sugar, eggs, and vanilla extract until well combined.
  4. In another bowl, whisk together flour, baking soda, salt, and cinnamon. Gradually add dry ingredients to the wet mixture until just combined.
  5. In a small bowl, mix additional sugar with cinnamon for swirling. Pour half of the batter into the loaf pan, sprinkle half of the cinnamon-sugar mixture on top, add the remaining batter, and finish with the rest of the sprinkle mix. Use a knife to create swirls.
  6. Bake for about 60 minutes or until a toothpick comes out clean from the center. Allow cooling slightly before slicing.
