  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 4 cloves fresh garlic, minced
  • 1/2 cup capers, rinsed
  • 1/2 cup freshly squeezed lemon juice
  • 1 cup low-sodium chicken broth
  • 1/2 cup heavy cream
  • Salt and black pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a baking dish with nonstick spray.
  2. Season the chicken breasts with salt, pepper, and minced garlic.
  3. In a skillet over medium heat, add olive oil and sauté the chicken until golden brown on both sides (about 5-7 minutes per side). They don’t need to be fully cooked at this stage.
  4. Remove the chicken and add chicken broth, heavy cream, capers, and lemon juice to the skillet. Stir well while scraping any browned bits from the bottom.
  5. Place the sautéed chicken into the greased baking dish and pour the sauce over it.
  6. Cover with foil and bake for 25-30 minutes until bubbly. For a crispy top, uncover during the last five minutes.
