  • 1 cup low-sodium chicken broth

Instructions

  1. Trim excess fat from the chicken breasts and gently pound them to an even thickness.
  2. In a shallow dish, mix flour with salt and pepper. Dredge each chicken breast in the flour mixture until well-coated.
  3. Heat olive oil and half of the butter in a large skillet over medium-high heat. Once hot, carefully add the chicken breasts.
  4. Cook each side for about 4-5 minutes until golden brown and cooked through (internal temperature should reach at least 165°F or 74°C). Remove from skillet and keep warm.
  5. In the same skillet, add chicken broth, lemon juice, capers, and remaining butter. Scrape up browned bits from the pan for extra flavor.
  6. Return chicken to the skillet, coating it in sauce for about one minute before serving on plates garnished with fresh parsley.
