Ingredients

Scale
  • 1 head cauliflower, chopped into florets
  • 2 cups sharp cheddar cheese, shredded
  • 0.5 cup Parmesan cheese, grated
  • 3 cups whole milk (or plant-based milk)
  • 4 tablespoons unsalted butter
  • 4 tablespoons all-purpose flour
  • Salt and pepper to taste
  • Pinch of nutmeg (optional)

Instructions

  1. Preheat the oven to 375°F (190°C). Wash and chop the cauliflower into bite-sized florets.
  2. Boil salted water in a large pot, add the florets, and cook for about 5 minutes until just tender. Drain and set aside.
  3. In a saucepan over medium heat, melt the butter. Stir in the flour until smooth to form a roux. Gradually whisk in the milk and cook until thickened.
  4. Remove from heat; stir in the cheddar and half of the Parmesan until melted. Season with salt, pepper, and nutmeg if using.
  5. In a greased baking dish, layer half of the cauliflower, pour half of the cheese sauce on top, then repeat with remaining ingredients. Sprinkle with remaining Parmesan.
  6. Bake for 25-30 minutes or until golden brown.
