  • 3 pounds chuck roast
  • 4 dried guajillo peppers
  • 1 large onion, roughly chopped
  • 6 garlic cloves
  • 2 tsp ground cumin
  • 2 tsp dried oregano
  • 12 corn tortillas
  • Fresh cilantro (for garnish)
  • Lime wedges (for serving)

Instructions

  1. Cut the chuck roast into large chunks and season generously with salt and pepper. Sear in a large pot over medium heat until browned on all sides.
  2. Toast the guajillo peppers in a dry skillet for about 2 minutes until fragrant.
  3. Blend the toasted peppers with onion, garlic, cumin, oregano, and one cup of water from the pot until smooth.
  4. Pour the blended sauce over the seared meat; add three cups of water (or beef broth) and bring to a gentle boil. Lower heat and cover; simmer for about three hours until fork-tender.
  5. Shred the beef using forks and return to the pot to soak up juices.
  6. Warm corn tortillas on a skillet or over flame, fill with shredded beef, and top with fresh cilantro and lime juice.
