  • 1 cup unsweetened cocoa powder
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter (melted)
  • 2 large eggs (room temperature)
  • 1/2 cup all-purpose flour
  • 2 tbsp instant coffee granules (dissolved in 2 tbsp warm water)
  • 8 oz mascarpone cheese (softened)
  • Cocoa powder (for dusting)

Instructions

  1. Preheat oven to 350°F (175°C) and grease or line an 8×8-inch baking pan with parchment paper.
  2. Melt unsalted butter in a saucepan over low heat. Stir in granulated sugar until well combined and let cool slightly. Then, whisk in eggs one at a time.
  3. In another bowl, mix cocoa powder, flour, and dissolved coffee granules. Gently fold this dry mixture into the wet ingredients until just combined.
  4. Pour the brownie batter into the prepared baking pan and bake for 25-30 minutes or until a toothpick comes out clean.
  5. While cooling, whisk mascarpone cheese with dissolved coffee until smooth. Spread over cooled brownies and dust with cocoa powder before slicing.
