- 1/2 cup unsalted butter (melted)
- 2 large eggs (room temperature)
- 1/2 cup all-purpose flour
- 2 tbsp instant coffee granules (dissolved in 2 tbsp warm water)
- 8 oz mascarpone cheese (softened)
- Cocoa powder (for dusting)
- Preheat oven to 350°F (175°C) and grease or line an 8×8-inch baking pan with parchment paper.
- Melt unsalted butter in a saucepan over low heat. Stir in granulated sugar until well combined and let cool slightly. Then, whisk in eggs one at a time.
- In another bowl, mix cocoa powder, flour, and dissolved coffee granules. Gently fold this dry mixture into the wet ingredients until just combined.
- Pour the brownie batter into the prepared baking pan and bake for 25-30 minutes or until a toothpick comes out clean.
- While cooling, whisk mascarpone cheese with dissolved coffee until smooth. Spread over cooled brownies and dust with cocoa powder before slicing.
