Ingredients

Scale
  • 4 store-bought croissants
  • 1 cup whole milk
  • 1/3 cup granulated sugar
  • 1 tsp pure vanilla extract
  • 4 large egg yolks
  • 2 tbsp cornstarch
  • 1 cup dark chocolate chips
  • 1/2 cup heavy cream

Instructions

  1. Prepare the custard: In a saucepan, heat milk, sugar, and vanilla until warm. In a bowl, whisk together egg yolks and cornstarch. Gradually mix warm milk into the egg mixture. Return to saucepan and cook over medium heat until thickened (5-7 minutes). Cool slightly.
  2. Fill croissants: Cut each croissant lengthwise without slicing all the way through. Fill generously with custard using a spoon or piping bag.
  3. Make ganache: Heat heavy cream in a saucepan until simmering. Pour over chocolate chips in a bowl; let sit for 2 minutes before stirring until smooth.
  4. Drizzle ganache over filled croissants or dip tops into it. Serve immediately or chill before serving.
