  • 8 oz cream cheese, softened
  • 1 cup sour cream
  • 1/2 cup granulated sugar
  • 1 tsp vanilla extract
  • 1 tbsp gelatin powder
  • 3/4 cup toasted pistachios, chopped (unsalted)
  • 1 cup fresh raspberries

Instructions

  1. Grease dome-shaped molds with nonstick spray.
  2. In a mixing bowl, beat cream cheese and sour cream until smooth. Add sugar, vanilla extract, and gelatin; mix until well combined.
  3. Gently fold in half of the chopped pistachios and half of the raspberries.
  4. Spoon the mixture into molds until they are three-quarters full. Tap to remove air bubbles.
  5. Cover and refrigerate for at least four hours or until set.
  6. Carefully remove from molds and garnish with remaining raspberries and pistachios before serving.
