  • 4 bell peppers (mixed red, yellow, green)
  • 1 lb lean ground meat (beef, turkey, or chicken)
  • 1 cup cooked rice (white or brown)
  • 1 medium onion (finely chopped)
  • 2 cloves garlic (minced)
  • 1 can (14.5 oz) diced tomatoes
  • 2 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly spray a baking dish with nonstick cooking spray.
  2. Cut the tops off the bell peppers and remove the seeds.
  3. In a skillet over medium heat, sauté chopped onions until translucent, about 5 minutes. Add minced garlic and ground meat; cook until browned, around 8 minutes.
  4. Stir in cooked rice, diced tomatoes, Italian seasoning, salt, and pepper; simmer for 5 minutes.
  5. Stuff each pepper generously with the filling mixture and place them upright in the baking dish.
  6. Cover with foil and bake for about 30 minutes; remove foil for the last 10 minutes for a crispy top.
