  • 4 boneless, skinless chicken breasts (about 1 lb)
  • 2 cloves garlic, minced
  • 6 cups mixed greens (spinach, arugula, romaine)
  • 1 cup cherry tomatoes, halved
  • 1 large cucumber, thinly sliced
  • 3 tbsp toasted sesame oil
  • 3 tbsp low-sodium soy sauce
  • 1 tbsp honey
  • Salt and pepper to taste
  • Sesame seeds for garnish

Instructions

  1. Preheat oven to 400Β°F (200Β°C). Coat chicken breasts with olive oil, salt, and pepper. Place on a lined baking sheet.
  2. Bake chicken for 20-25 minutes until the internal temperature reaches 165Β°F (75Β°C). Remove from oven and let cool.
  3. While chicken bakes, chop mixed greens and slice cherry tomatoes and cucumber into bite-sized pieces. Combine in a large bowl.
  4. In a small bowl, whisk together sesame oil, soy sauce, honey, minced garlic, and black pepper.
  5. Once cooled, slice the chicken into strips or cubes and add to the salad bowl. Drizzle with dressing and toss gently.
  6. Serve immediately, garnished with sesame seeds.
