  • 1 ½ cups water
  • 1 medium cucumber, diced
  • 1 cup cherry tomatoes, halved

  • ½ cup Kalamata olives, pitted and halved
  • ½ cup feta cheese, crumbled (optional)
  • ¼ cup fresh parsley, chopped
  • Juice of 1 lemon
  • 3 tablespoons extra virgin olive oil

Instructions

  1. Rinse the quinoa under cold water. In a pot, bring 1 ½ cups of water to a boil. Add the quinoa, reduce heat to low, cover, and simmer for about 15 minutes until fluffy.
  2. While quinoa cooks, chop the cucumber, cherry tomatoes, red onion, bell pepper, and parsley.
  3. In a large bowl, combine cooked quinoa with chopped veggies.
  4. In a separate bowl, whisk together olive oil and lemon juice before drizzling over the salad. Season with salt and pepper.
  5. Gently fold in feta cheese and olives if using.
  6. Chill in the fridge for at least 30 minutes before serving.
