  • 8 oz pasta (spaghetti, penne, or farfalle)
  • 2 tbsp extra virgin olive oil
  • 4 cloves fresh garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1 tsp Italian seasoning
  • ½ cup freshly grated Parmesan cheese

Instructions

  1. Boil water in a large pot. Add salt and cook pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet over medium heat, heat olive oil. Add minced garlic and sauté until fragrant (about 1 minute).
  3. Stir in diced tomatoes and Italian seasoning. Simmer for about 5 minutes until slightly thickened.
  4. Add cooked pasta to the skillet, tossing to coat with sauce. If dry, add reserved pasta water as needed.
  5. Sprinkle Parmesan cheese on top and mix well until melted.
  6. Serve hot with additional cheese and fresh basil if desired.
