  • 1 box (15.25 oz) Red Velvet Cake Mix
  • 2 large Eggs
  • 1/2 cup Vegetable Oil
  • 8 oz Cream Cheese, softened
  • 1/2 cup Granulated Sugar
  • 1 tsp Vanilla Extract
  • 1 cup Powdered Sugar
  • Whipped Cream for topping

Instructions

  1. Preheat oven to 350°F (175°C) and grease a mini muffin pan.
  2. In a bowl, mix the red velvet cake mix, eggs, and vegetable oil until just combined.
  3. Fill each muffin cup with about one tablespoon of batter and bake for 10-12 minutes or until a toothpick comes out clean.
  4. In another bowl, beat together cream cheese, granulated sugar, powdered sugar, and vanilla extract until smooth.
  5. Once baked, cool bites completely in the pan before chilling in the fridge for an hour.
  6. Create wells on top of each bite and fill with cheesecake mixture; top with whipped cream.
