- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 8 oz sliced mushrooms
- 1 cup sour cream
- 8 oz wide egg noodles
- 2 cups beef broth
- 1 tsp smoked paprika
- 2 tbsp all-purpose flour
- 2 tbsp olive oil
- Salt and pepper to taste
- Preheat the oven to 375°F (190°C).
- In a large bowl, mix ground turkey, onion, garlic, breadcrumbs, salt, and pepper until just combined. Form into small meatballs.
- Heat olive oil in a skillet over medium heat. Sauté mushrooms until golden brown (about 5 minutes). Remove and set aside.
- Place meatballs on a baking sheet lined with parchment paper and bake for 20 minutes.
- In the same skillet, whisk together flour and beef broth over medium heat until smooth. Stir in paprika and simmer for 5–7 minutes until thickened.
- Remove from heat; stir in sour cream until well combined. Fold in baked meatballs and sautéed mushrooms.
- Serve over cooked egg noodles.
