Ingredients

Scale
  • 3 boneless, skinless chicken breasts (about 1.5 lbs), sliced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 green bell pepper, sliced
  • 2 cups broccoli florets
  • 2 medium carrots, thinly sliced
  • 1/4 cup low-sodium soy sauce
  • 2 tbsp honey (or maple syrup)
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 2 tbsp vegetable oil

Instructions

  1. 1. Wash and chop the vegetables into bite-sized pieces; slice the chicken into thin strips.
  2. 2. In a medium bowl, whisk together soy sauce, honey, minced garlic, and grated ginger to create the teriyaki sauce.
  3. 3. Heat vegetable oil in a large skillet or wok over medium-high heat. Add the chicken strips and stir-fry for about 5–7 minutes until golden brown and cooked through.
  4. 4. Add the sliced bell peppers, broccoli florets, and carrot slices to the skillet. Stir-fry for an additional 3–4 minutes until vegetables are tender-crisp.
  5. 5. Pour the teriyaki sauce over the chicken and vegetables. Toss to combine and let simmer for another minute or two.
  6. 6. Serve hot over steamed rice or quinoa with extra sauce drizzled on top.
